For the Caramelised Popcorn

  • 100 g puffed corn
  • 100 g caster sugar
  • 50


Bring the water and sugar up to the boil. Reduce the syrup until it just starts to turn a golden yellow.

Add the popcorn and stir to coat in the caramel. When all the pieces are covered remove from the heat, add the salt followed by the butter. Gently stir until the caramel has cooled a little and the popcorn is loose. Store in an airtight container until needed.
