For the Strawberry Vinegar

  • 500 g fresh English strawberries
  • 500 ml white wine vinegar
  • 250

Method

Gently crush the whole strawberries with the back of a fork. Pour the cold vinegar over the strawberries. Place in an airtight container and leave to macerate for 14 days. Strain the liquid through a chinoise into a pan. Add the sugar and bring to the boil. Skim off any scum and then strain into a clean tub. Leave to cool.
