For the Elderflower Mousse

  • 350 ml milk
  • 150 ml double cream
  • 5


Soften the gelatine in iced cold water for 10 minutes. Bring the milk, cream and elderflowers to the boil. Add the gelatine and sugar to taste. Leave for 20 minutes to infuse then strain into a clean container. Leave in the fridge until set. When fully set, pour into a 1 litre iSi canister and char
