For the Strawberry Granita

  • 100 g caster sugar
  • 500 g fresh English strawberries


Mix the sugar and strawberries together and gently warm in a pan to 50°C. Keep at this temperature for 30 minutes until the strawberries soften and lose their colour. Blend until completely smooth. If the mix is a little sweet season with a little citric acid if needed, this will depend on the sweetness of the strawberries.

Pass through a chinoise into a clean container.
