Dried Coconut

For the Dried Coconut

• 1 coconut
• caster sugar to taste

Crack open the coconut and shave the flesh wafer-thin on a mandoline. Place on a dehydrator tray and sprinkle with a little caster sugar. Dry at 58°C for 6 hours.
