We worked on this dish for nearly 8 months. The idea was to create something very nostalgic for guests in the restaurant.

The microwave sponge was inspired by Albert Adrià. Our development chef worked on different variations until we got exactly the right light mix and flavour. We use bramley apples, when they’re in season, and there’s little shards of dehydrated parsnip, which adds a lovely sweetness t
