This dish goes back to about 2005. We’ve used it in many different guises and the combinations are always fantastic. We’ve got some acidity, some freshness, some coolness from the yoghurt, all combined with a real spice element and aniseed from the liquorice.


You will also need

  • 5 fresh passion fruits, to squeeze over the final dish
  • 1 stick liquorice candy, for grating over the final dish
