For the Iced Passion Fruit

  • 4 leaves of gelatine
  • 100 ml water
  • 400


Soak the gelatine in iced cold water. Bring the passion fruit juice, water, glucose and sugar up to the boil. Take off the heat and whisk in the gelatine. Allowing 50g per person pour the mix into 8cm x 8cm moulds and freeze for 2 hours.
