  • 500 grams meat from the hind legs of a fahn (a small deer) excluding the tendons, sliced into pieces 2 cm by 3

Method

First of all mix the meat in the lime juice and squeeze out as much liquid as possible. Put this liquid in a small pot, cook it (for a very short time) and leave it to cool. (As it cools, it will separate into a clear part and a thick part.)
