(The species of sting-ray which inhabits the Mekong belongs to the genus DASYATIS and is. It is well-known at Luang Prabang, and it is not surprising that the recipe book of Phia Sing contained a recipe for it, even though sting-rays are usually sea fish.)

Ingredients

  • 1 piece of sting-ray about the size of a man’s hand, taken from the underside, cleaned of mucus and cut up into suitable small pieces
  • 2 stalks lemon grass, chopped and grou

Method

Put the prepared pieces of fish into a big bowl, add the pounded mixture, mix well and add salt and fish sauce to taste. Add also the sweet basil leaves and some of the chopped spring onion leaves. Mix well together.
