  • 10 large fresh chilli peppers, to be cut lengthwise but without completing the cut, then cored and seeded and soaked in water
  • 1 piece of pork, including some fat,


Mix thoroughly in a bowl the pounded and minced ingredients. Add salt, fish sauce and ground black pepper. Taste and check the saltiness. Sprinkle the chopped spring onion leaves on to the mixture and mix them in.
