  • 1 fistfulthao (a dark green kind of algae)—wash, pick out any foreign matter and squeeze out the water
  • minced pork, a quantity the size of a duck’s egg, parched in a hot pan without fat and then pounded finely

Method

Put a small amount of the meat broth in a bowl and the pounded minced pork, to produce a fairly liquid mixture. Sprinkle it with salt and fish sauce. Chop the washed thao so that it is not all stuck together, and stir it into the mixture. Add also the chopped spring onion bulbs, garlic and eggplant, the shrimps and the pounded sesame seeds.
