  • 1 pig’s trotter—singe it over a flame, then scrape off all the hair, remove the nails and wash it
  • 1 handful of peeled shallots


Put some water in a pot and put the pot on the fire, adding salt and the various ‘head vegetables’ (presumably meaning the shallots, garlic, cabbage and Chinese radish).
