  • 6 hen’s eggs—fry them one at a time, taking care that the yolks do not break, and if possible turn them over to cover the yolks, always keeping them intact; once the yolks are nearly cooked, take them out and arrange them on a platter

Method

Mix together the cooked pork, fried onion and chopped spring onion bulbs with the diced tomato and star-fruit. (Add salt and fish sauce.) Taste, and check the saltiness. Then arrange the mixture on top of the fried eggs, garnish with ground black pepper and chopped coriander and serve.
