Method

Put the pieces of fillet, the fat, the onions, parsley, salt and pepper in a bowl and mix well so that the spices are thoroughly blended and leave to marinade for several hours. Put about ten pieces on each skewer, alternating a piece of fillet with a piece of fat. Grill well on a very hot fire.
