On feast days this is the drink of the rich people of Fez. The proportions vary, but these seem good to me.

Ingredients

  • 1 lb 2 oz almonds
  • 2 pints water

Method

Pound the almonds into a smooth paste. Dilute the sugar with the water and blend with the almond paste. Pass through a fine sieve. Serve iced.
