This shallow tart is inspired by the Pissaladière of Provence but it has quite a different filling: sweet yellow peppers bound with an egg and saffron cream. You can, of course, make the tart with peppers of any colour, but there are moments of the year when the shops seem to be full of beautiful yellow ones, which I always think taste particularly mild and sweet.
