All over France you will find different versions of Tarte a l’Oignon and almost all are delicious. I much prefer a pure onion tart to any other combination. For my personal version I use pastry made with olive oil, which is something I tried when I had brought back some oil from Provence. It is particularly good for tart crusts because it can be baked blind, keeps its shape well and retains its crispness, while adding a subtle, southern flavour of olives to the pastry.
