When you spend some time in Spain you soon discover that a garlic soup doesn’t taste strongly of garlic. Garlic is only really pervasive when it is raw or only briefly cooked; longer cooking brings out its sweet, mild flavour and smooth consistency. There are all sorts of garlic soups in Spain, some with almonds in them, some not, but in my experience they are always served hot.
