About 25 years ago, my parents bought a fisherman’s cottage on the remote southern coast of an unknown Canary island. There was no hotel and we were the only foreigners there. I often think of Maria, who cooked for us. One year she made a particularly good pudding-cake for my birthday using local ingredients-almonds, oranges and bananas. This recipe is drawn from my memory of that cake. A good accompaniment to this, if you are using it as a pudding, is a bowl of good vanilla ice cream.
