Most people are familiar with this Turkish or Greek sweetmeat. Yet the baklava you can buy here, both in continental grocers and in restaurants, is often disappointing: stodgy and over-sweet, and rarely made with butter. Now that it is possible to buy ready-made filo pastry it is a dish which is well worth making at home, as the result is so much better. I like adding fruit and nuts and using a slightly sharp syrup.
