Couscous is eaten all over North Africa. It doesn’t look very inspiring, rather like cracked wheat, but subtly spiced and studded with almonds and dried fruit it tastes delicious. In Morocco couscous is used to stuff pigeons and chickens; it makes a delicious stuffing, very light in texture, and it can be a nice change from the more usual stuffed and roasted chicken.
