Here is a real mixture of cultures; this heartening dish of home-made ravioli is not as Italian as it looks. The spicy chicken stuffing of the egg pasta ‘pillows’ owes something to North Africa, India and Indonesia. But this should not really seem incongruous since forms of pasta have been eaten in the East for centuries and it is only a European habit to assume that it must always be Italian.
