In India, chicken is expensive and a whole bird is usually only served for a rather special occasion. The cooking of north India is less fiery than that of the south; dishes tend to be aromatically spiced rather than hot. Chicken is often marinated in yogurt and spices and the results are wonderful. For us, a chicken is one of the less expensive Sunday offerings and can be a bit dull. This way of cooking it will transform an ordinary battery bird into a dish fit for a banquet.
