  • 300 ml (10 fl oz) groundnut or vegetable oil
  • 6 tablespoons

Method

Heat a wok or large frying-pan over a high heat until it is hot. Add the oil and, when it is very hot and slightly smoking, add the garlic, ginger and spring onions. Cook in the hot wok until the vegetables turn brown. Remove immediately from the heat and allow to cool thoroughly. Let stand overnight.
