Heat a wok over a high heat, add the groundnut or vegetable oil and, when the oil is moderately hot, add the chillies and Sichuan peppercorns. Lower the heat and continue to cook over a low heat for about 10 minutes. Stir in the sesame oil and allow the mixture to cool thoroughly.
