  • 2 tablespoons plus 300 ml (10 fl oz) extra virgin olive oil

Method

Heat a non-stick wok or large non-stick frying-pan until it is hot, then add the 2 tablespoons of olive oil. Add the garlic, ginger, onions, celery, basil, oregano and bay leaves and stir-fry for 5 minutes. Then add the tomato purée and chopped tomatoes. Lower the heat and simmer for 15 minutes.
