Although sun-dried tomatoes in olive oil are widely available in supermarkets, it is just as easy to make your own. You can also flavour them with 1 tablespoon each of mixed chopped fresh herbs, chopped garlic and olive oil before they are placed in the oven.

Ingredients

  • 450 g (1 lb) tomatoes, preferably Roma

Method

Pre-heat the oven to 110°C/225°F/gas mark ¼.

Slice the tomatoes in half lengthways. Place them sliced side up on a baking tray and sprinkle with salt, pepper, sugar and olive oil. Put in the oven and leave overnight. The tomatoes should be dry, but not crispy or hard. They are
