This is an easy but spectacular grilled prawn starter that is very tasty. The prawns are simply grilled, cooked in a matter of minutes and then drizzled with a sauce made from garlic, chilli, basil, ginger and fresh coriander, giving them a rich green colour as well as a delectable bite. The inspiration is from both Asia and Europe; the combination is what makes fusion cooking so exciting and new.
