This dish is a typical example of fusion cooking. I use rice paper (a very Asian ingredient) to wrap cod (a very European fish), and season it at the same time with fresh Asian and western herbs, and a touch of Madras curry powder. It is surprisingly easy to make and the results are a delightful crackling and stunning-looking appetizer that will surely impress your family, friends and guests. You can use halibut or sea bass instead of cod.
