Full of flavour and texture, the humble peanut is a valuable source of nutrition in a vegetarian diet. Here we have an unusual way to pay our respects to peanuts, and stir-frying them with chillies gives them a wonderful piquant kick. Serve this dish as a snack with drinks or as a notable addition to any meal.

Ingredients

  • 225 g (8 oz) raw peanuts
  • tablespoons oil, preferably

Method

Pick over and remove any loose skins from the peanuts.

Heat a wok or large frying-pan over a high heat until it is hot; then add the oil. When the oil is hot and slightly smoking, stir-fry the peanuts for 2 minutes, until they are lightly brown. Then add the chillies and garlic and stir-fry for 2 minutes. Sprinkle in the sugar and salt. Continue to stir-fry for 2 minutes, mixing well. T
