Fresh, sweet peas in season are a real treat, with their earthy flavour and pleasant texture. As legumes, they are quite nutritious in terms of the protein, iron and b vitamins they provide.

Here, a touch of fresh ginger adds zesty spice to this luscious soup. I use potatoes rather than cream or butter to thicken the soup slightly. The bonus is that it reheats very well, making it ideal for easy serving at your convenience.
