Neil Perry, one of the best chefs in Sydney, has ingeniously combined the flavours of Asia in his ground-breaking cuisine. This dish is typical of his mouthwatering cooking - oxtail is braised and then stir-fried in a flavourful coconut milk paste. Much of the work can be done ahead of time and the bonus is that the dish reheats well. Add the fresh herbs at the last moment, in any case. Steamed Rice is ideal for this juicy dish.
