Soy sauce and mustard are two ingredients that fuse beautifully, even though they are from two completely different food cultures. Chicken thighs can withstand the strong flavours of this easy-to-make sauce. Serve it with a salad for a light meal.
Remove the skin and bone from unboned chicken thighs. Lay the chicken thighs on a baking tray.
In a blender or food processor, mix the soy sauce, mustard, pepper, garlic, ginger, orange zest, coriander, parsley, sesame oil and olive oil until smooth. With a spatula, smear each side of the thighs evenly with this mixture.
