Quail is a wonderful delicacy that is becoming more and more available. This small bird is quite delicious and easy to prepare, I especially like the japanese method, which is a marinade that seeps into the quail meat, making it a savoury treat. Once marinated, they cook quickly on a smoky grill. This dish is perfect with a salad in summer and also makes an ideal starter.
