Celery is an undervalued vegetable and deserves more respect. It is delicious in its own crunchy, mild and unassuming way and its distinctive taste makes it an ideal foil for spicy flavours.
Here, it is combined with curry in a simple, easy-to-make dish, you will see that this humble vegetable has a real role to play.
Trim the base of the celery and all the top leaves. Separate the sticks. With a small, sharp knife, string any tough sticks. Chop the sticks into 2.5 cm (1 in) sections.
Heat a wok or large frying-pan over a high heat until it is hot. Add the oil and, when it is very hot and slightly smoking, add the garlic and ginger and stir-fry for 10 seconds. Then add the celery and continue to stir
