This ambrosial alternative to humble mashed potato is easy to make and will surely surprise your dinner guests and family. The cucumbers lighten the potatoes, as well as giving the dish an unusual texture.
Peel the cucumbers, slice them in half lengthways and, using a teaspoon, remove the seeds. Then cut the cucumber halves into slices. Sprinkle them with the salt and mix well. Put the mixture in a colander and leave for 45 minutes to drain. This rids the cucumber slices of any excess liquid.
