Rice is a marvellous food that imparts substance and mild congeniality to any dish. It is not naturally a colourful ingredient but it does absorb the colour spectrum as well as it absorbs spices, sauces and seasonings.
I first enjoyed this colourful rice dish at the joyce café in Hong Kong. It is an integral part of their popular fusion cooking.
