Nonya cooking is a mixture of Chinese and Malay cuisines, also known as ‘Straits Chinese’ in Malaysia and Singapore. The word laksa describes a one-dish meal of rice noodles, traditionally prepared with either seafood or chicken. Clearly, this is a versatile dish and it certainly adapts well to the vegetarian mode. Its many aromatic ingredients and spicy flavours ensure that it is as tasty as the original, non-vegetarian versions, but lighter.
