There is nothing more satisfying than a velvety crème Anglaise or custard cream. In this recipe, the flavouring is the citrus fragrance of lemon grass. It is not difficult to make but you must be careful to keep stirring at a low temperature to keep the mixture from curdling. Once you have made this several times, you will find that it is a quick and easy dessert sauce that can enhance fresh fruit - or serve it with Chocolate Cake with Candied Ginger.
