Ingredients

  • Potatoes cut in desired pieces
  • Salt or garlic salt
  • Friture for frying

Method

Peel and cut potatoes. Soak for half hour in cold water to remove starch. Wipe dry. Fry in deep hot fat until yellow. Remove from fat, cool for 5 minutes. Return to hot fat and brown. The interrupted cooking makes them light, dry and puffs them. Sometime try garlic salt on them.
