Potato Souffle

Ingredients

  • 3 cups mashed potatoes
  • Melted butter
  • 3 eggs, separated
  • Chopped parsley
  • Bread crumbs
  • Salt and pepper

Method

Add yolks to potatoes and beat hard. Correct seasoning. Beat whites and fold into potatoes. Place in casserole, sprinkle with parsley and bread crumbs, and pour butter over top. Bake in 350° oven for 30 minites. Serve with fish and chops.
