Stuffed Eggs

  • Eggs (two per person)
  • 1 tablespoon chopped chives or shallots
  • 2 tablespoon melted butter
  • Salt and pepper


Cook eggs until hard. Cool for easier handling. With very sharp knife cut eggs in half lengthwise. Remove egg from shell, being careful not to break the shell, and chop fine. Add melted butter, chives and season. Mix thoroughly and fill shells. Fry in butter for 10 minutes face down.
