This is only fast in cooking time, of course, not if you usually cook and do five other things simultaneously, because risotto needs a little technique and your undivided attention. But it’s a wonderful way to put the flavour and texture of fresh green asparagus centre stage. Mix the asparagus with fresh peas, broad beans and fresh herbs thrown in at the end for a lovely springtime feast.
