This is another speedy dish that’s perfect for when your mind is busy with things other than cooking. The lemon zest adds a subtle hint of character to the luscious creamy pasta, while making it look pretty as well.

Ingredients

  • a couple of handfuls of fresh pasta (tagliatelle or spaghetti is perfect)
  • 2 tablespoons mascarpone cheese

Method

Cook the pasta until it is al dente, then drain.

Add the cheeses and lemon zest, mix well and season with salt and pepper.

Serve immediately.
