Guacamole with tortilla chips has been broadly adopted by the French as a popular aperitif to nibble on and with the onslaught of finger food, mini portions, verrines and tapas, you’ll now find guacamole served in small glasses as a soup at cocktail parties, with a little dash of tequila to keep things interesting. Serve it with warmed tortillas - it is very rich, so small quantities will suffice.
