Champignons de Paris are one of the mainstays of any plate of crudités. The delicate taste of fresh raw mushrooms is a lovely way to start a meal.
Slice the mushrooms very finely and arrange them on a serving plate. Sprinkle with the lemon juice and zest and with olive oil.
Tear the herbs and scatter them over the top, then season with salt and pepper.
Finally, with a vegetable peeler, shave pieces of Parmesan over the mushrooms and serve.
