Roasted goat’s cheese on country bread has become a real French classic. In this more delicate version, the lettuce is much less of an afterthought than it is in the original, as I love Little Gem leaves. The caramel thing is a bit of a palaver, so only attempt this if you are feeling artistic or particularly want to impress and delight your guests. It is very pretty, though, I’m sure you’ll agree, and the crunchy twang of the vinegar caramel goes awfully well with the creamy cheese and fre
