This type of French shepherd’s pie is traditionally a dish for using up leftover beef and vegetables from the poached meat stew, pot au feu. However, its versatility and practicality make it a great base from which to play around with layers and ingredients. You can vary them to your heart’s content. Here I’m using tinned confit of duck - another favourite larder staple.
