Ingredients

  • 2 kg chicken bones
  • olive oil or goose fat
  • 2 celery sticks, chopped

Method

Preheat the oven to 190°C/375°F/gas mark 5.

Put the chicken bones in a roasting tin with some olive oil, or goose fat if you can get it, and roast for about 20 minutes
